On Saturday Luke and I made a trip over to Memphis to see Tyler Perry's Madea's Big Happy Family. I couldn't wait!!!! We made it to Memphis in time to do a little yarn shopping....for me that is...and eat at the Neely's. I was super excited about getting to eat at the Neely's.....let's just say it wasn't all it was cracked up to be. I ordered BBQ Nachos....they came with squirt cheese all over them!!!!! Luke got the ribs and neither one of us were impressed. After lunch, we decided to walk in downtown Memphis. We enjoyed some ice cream at Maggie Moo's and even took a few pictures.

Tyler's play was at 3. It was a WONDERFUL play!!!!! Cassie Vance who plays Ella in House of Payne was in this play as well as Tyler himself....as Madea. He sang "Pants on the Ground" and a few other songs. Once he got on a roll though, it was hilarious. Some people don't like the Madea character, but I think we need more Madea's in this world. She doesn't take any crap off people, tells it like it is, and this play had Jesus all in it....in a good way!!!! If it didn't make you want to PTL then I don't know what will. OK, I'm off my soapbox, enjoy the pictures!!!!

A New Recipe


Pardon the blurry picture- Luke messed up a setting on my camera and I didn't know til days later!!!!

I made my own recipe the other night for dinner. Thought I would share:

Croissant French Toast
4 Croissants
4 eggs
1/2 c. milk
salt & pepper to taste
1/2 c. sugar

Filling:
4 oz. cream cheese
2 T. sugar
2 T. orange marmalade

Slice Croissants in half. Mix the eggs, milk, salt, pepper, and sugar together (I'm really guessing on the proportions here...I don't measure when I make french toast). For the filling, cream the cream cheese, sugar, and orange marmalade together. Spread in on the bottom of a croissant. Place the top back on the croissant and dip into the egg, milk mixture. Place on a hot skillet til brown on each side. They were great!!! You can even switch what kind of jelly you use for the filling. I think strawberry would be good too!

Christylee, Tonia, Alicia, and I got together this past Saturday night for our annual Birthday celebration. We had fun as always! Christylee made delicious Chicken Chimichangas. We had Cheese dip & Chips, Taquitos, all the fixings, cake and ice cream. We were going to watch a movie, but instead ended up visiting til almost midnight. Of course, I had to take pictures of Lily....and she even played with her stroller and baby while I was there....made me teary eyed for sure!!!

Chicken Chimichanga Recipe....its baked too!!!
2/3 c. salsa
1 t. cumin
1/2 t. oregano
1 1/2 c. shredded chicken
1 c. mexican cheese
2 green onion tops
6 tortillas
2 T. butter, melted
Mix together the 1st 6 ingredients. Fill tortillas and roll them up. Place seam side down on a cookie sheet. Brush with melted butter. Bake 400 degrees for 20 minutes. They are crispy and delicious....I think the filling would be good in enchiladas too! Enjoy!

Man the weather surprised us!!! I didn't think we were going to get any snow...but we did! It was strange having all the dogs except Madison at Dr. Mike's. I'm so glad Luke got the dog pens built on Sunday....because there is no way we could do it now! I really wanted to make a snowman on Monday, but Luke was working and we just didn't get around to it. So, yesterday we decided to make one before we went and got the dogs. Yeah right!!! The snow was refrozen and hard. So instead of making an upright snowman, we just built one on the ground. He had a carrot for a nose, lean treats for eyes, and dog cookies for a mouth....and yes I knitted that scarf. It was fun!
