Some new Recipes!!

Loaded Baked Potato Packets on the Grill

I didn't get a chance to take a pic, as Luke and I scarfed these down tonight!!! Here's what I did though. Thinly slice 2 baked potatoes, 2 small vidalia onions and place on foil that has been sprayed. Salt and pepper. Add cheddar cheese and bacon bits. Wrap up tightly and put on the grill for about 30 minutes flipping once. They are TOO good!
Paula Deen Smore Bars

Paula Deen Smore Bars- I made these for scrapbooking last night and they were a hit!

1/2 c. butter, softened
3/4 c. sugar
1 egg
1 t. vanilla
1 1/3 c. all purpose flour
3/4 c. graham cracker crumbs
1 t. baking powder
1/4 t. salt
4 (1.5 oz) Hershey Bars- I used 1/2 a bag of milk chocolate chips
1 c. marshmallow creme- I didn't even measure...so I probably used more of this!
Preheat oven to 350. Spray 8 inch baking pan with cooking spray. In large bowl cream butter and sugar together. Add egg and vanilla and mix well. In another bowl combine graham cracker crumbs, flour, baking powder, salt. Add to butter mixture and beat until combined. Spread 1/2 of dough mixture into the bottom of the pan. Press evenly. Add your Hershey bars or chocolate chips on top of the dough mixture. Spread your marshmallow creme on top of the chocolate. Sprinkle with remaining dough mixture. Bake 30-35 minutes. Cut into squares and serve.

I am Speechless!!!

I got the biggest compliment today! I just received a call from the school counselor where I had been tutoring at. She told me how much my little tutor person loved having me for a tutor. She also said she wanted to mail me something....would that be OK? I told her sure! She had her Mom standing there and her Mom said that my little person had been cooking up a storm since I gave her that cookbook. She said that I made a big impact on my little person this year....but the BEST news is........ I get to tutor her again next year!!!! I'm so excited! So next year I'm going to be just as busy with my little person. I can't wait!!!! The Lord has blessed me beyond words...I guess this is what it truly means to follow His Will!

After lunch Luke and I headed to Hot Springs Village with his Uncle Jeff and Aunt Robin. We had the best time! We drove around looking at the golf courses and houses. We even had time to fish!! We weren't sure if we would catch anything, but Jeff did! He got a big catfish...only it was too dark for me to get a good pic of it. We released him anyway....I just can't stand when they gasp for air!!! We had a good evening for sure!

We celebrated Memorial Day with Luke's family. We had burgers (which Jeff grilled), cheese dip and chips and beans. It was so good! It was a great time to visit with family and remember those that gave us our freedom!

Congrats Mr. Wiles!!!

Mr. Wiles and Luke

Luke and I went to Hot Springs on Saturday to a reception honoring Mr. Wiles' graduation! Mr. Wiles and Mrs. Wiles taught us for several years at SCA. It was a hoot to see them again. We talked about old times and good memories. Mr. Wiles taught my high school chemistry class...and I don't think he'll ever live down blowing something up in that class. They were both wonderful teachers and sure did make an impact on our lives! Congrats again Mr. Wiles!

Lisa and Jodi- Jodi just finished the purple shawl

Ok, so you might get tired of seeing the same ladies, but I don't think I ever will. The talent in this group is amazing!!! Nancy Arnold made a shawl for a person in our group who was diagnosed with cancer. At our meeting, she was able to give it to Mrs. Carita Taylor...who is just super sweet. It was a neat thing to see a shawl someone made be given to the recipient by the same person. This is truly an amazing ministry!
