A New Recipe

Pardon the blurry picture- Luke messed up a setting on my camera and I didn't know til days later!!!!

I made my own recipe the other night for dinner. Thought I would share:

Croissant French Toast
4 Croissants
4 eggs
1/2 c. milk
salt & pepper to taste
1/2 c. sugar

Filling:
4 oz. cream cheese
2 T. sugar
2 T. orange marmalade

Slice Croissants in half. Mix the eggs, milk, salt, pepper, and sugar together (I'm really guessing on the proportions here...I don't measure when I make french toast). For the filling, cream the cream cheese, sugar, and orange marmalade together. Spread in on the bottom of a croissant. Place the top back on the croissant and dip into the egg, milk mixture. Place on a hot skillet til brown on each side. They were great!!! You can even switch what kind of jelly you use for the filling. I think strawberry would be good too!

More of Lil's!

Christylee, Tonia, Alicia, and I got together this past Saturday night for our annual Birthday celebration. We had fun as always! Christylee made delicious Chicken Chimichangas. We had Cheese dip & Chips, Taquitos, all the fixings, cake and ice cream. We were going to watch a movie, but instead ended up visiting til almost midnight. Of course, I had to take pictures of Lily....and she even played with her stroller and baby while I was there....made me teary eyed for sure!!!

Chicken Chimichanga Recipe....its baked too!!!
2/3 c. salsa
1 t. cumin
1/2 t. oregano
1 1/2 c. shredded chicken
1 c. mexican cheese
2 green onion tops
6 tortillas
2 T. butter, melted
Mix together the 1st 6 ingredients. Fill tortillas and roll them up. Place seam side down on a cookie sheet. Brush with melted butter. Bake 400 degrees for 20 minutes. They are crispy and delicious....I think the filling would be good in enchiladas too! Enjoy!

Dogs in Pens.....and lots of posts below!!!!

Happy Parents of 4 dogs in Pens......

Old BeetleJuice

Mr. Snoopers...is not thrilled!!!

Stormy Britches didn't really care if she was in pen or not!!

Old Samson the trouble maker....he wasn't too happy either!

Here's a view of our backyard pens. They aren't too happy, but Momma will be even more happy once we install the hotwire. Poor Snoopy is really having issues, but it will all work itself out soon....at least I hope so!

Snow, Snow, Snow!!!!

Me & the hubby setting out to build a snowman.....

Making the belly is hard work...ha!

Putting on a face

Every dog and guinea pigs dream....lean treats, milk bones, and a carrot!

Don't forget Bradford Pear arms and a homemade knitted scarf

Snow!!!!!!

More Snow!!!!

George's footprint in the snow

Madison would rather sit inside on a heating pad than be outside in the snow!

Here's old Fathead George resting and watching TV.

Madison and my footprints.....we missed the other doggies.

George wasn't sure of the snow.

Madison was and there was no way she wanted to go outside!

Our house

Man the weather surprised us!!! I didn't think we were going to get any snow...but we did! It was strange having all the dogs except Madison at Dr. Mike's. I'm so glad Luke got the dog pens built on Sunday....because there is no way we could do it now! I really wanted to make a snowman on Monday, but Luke was working and we just didn't get around to it. So, yesterday we decided to make one before we went and got the dogs. Yeah right!!! The snow was refrozen and hard. So instead of making an upright snowman, we just built one on the ground. He had a carrot for a nose, lean treats for eyes, and dog cookies for a mouth....and yes I knitted that scarf. It was fun!

Dog Pens are Built!!!!

Greg & Luke doing manly things....I'm really not sure!

Dog pens in the making....

Thanks to Greg Davis and Luke for making our doggie pens. They turned out really nice. All we have left to do is install the hotwire and take down the old pen. They aren't really thrilled right now, but will get used to it. It's wonderful knowing no one can get hurt now....at least from each other!!!

Let the Building Begin....

This past Thursday.....these two thugs got into a knock down drag out fight.....

Culprit #1: Samson....AKA....Don't mess with me at all dog!!!

Culprit #2: BJ....AKA...I'm a thug!!!!

It was your typical Thursday afternoon: nice, cool outside, a slight breeze blowing....when all of a sudden it was a school yard fight!!!! This is no laughing matter as Mrs. Principal Williams had to get involved this time. Yep, she separated us.....but not without a fight, mud, blood, the whole nine yards. All the while.....

The School Yard Cheering Section: Snoopy barking the whole time. Which led to him getting his ear bit too!!!

Poor Mrs. Principal Williams suffered traumatic injuries to her right arm.

Bad, Bad Doggies......

The Punishment:

We're building 4 separate dog pens starting this weekend. Bye Bye nice big yard....hello good sized pens and separation.

In all seriousness, this is one of the worst fights I've ever seen them in. Samson being part pit....well no one wants him, he's aggressive with other dogs.....but a gentle spirit with Luke and me. It broke my heart to think of someone else owning him and treating him badly. So, instead of doing what any other person would do and get rid of him, we're spending a chunk and trying to give them all the life no one else wanted them to have!!! I'm sure you think we're nuts, but then again, I think we are too!!!
