Ok, so last night I wanted a chicken pot pie...but not one with a biscuit crust. So, I of course, turned to my dear friend Paula. I didn't have the "heavy cream" nor did I want to follow all of her steps...so I used some of her knowledge and some of my own!
Here is what I did:
1. Bought frozen puff pastry. I used both sheets in the box. I let them thaw then I cut them into strips and latticed them onto a piece of parchment paper (on a cookie sheet). I baked them at 375 til they were very lightly browned.
2. Then I boiled my chicken and left a little bit of the broth with it. I added 1 can cream of mushroom soup, 1 can cream of chicken soup, a can of carrots (drained), 1 can of green beans (drained) and 1 can of whole kernel corn (drained).
3. I shred my chicken and mixed all of the above together. I sprayed a 9x13 pan and put the chicken mixture in the bottom. I then transferred the lattice work to the top. I baked it all about an hour or so at 350...watching and turning the heat down so it wouldn't burn on the top. It was to die for!!!
I know, it's sad I took pics of my cooking, but I even impressed myself!!! That's hard to do!

I am so proud of my girl!!!!! What a cook you've turned out to be - only BAD thing is that I can't eat it!!!! And gosh does it look great! Soon...soon I'll be able to eat a little of it. 38lbs down and 30 more to go! LOL Love ya kid!
YUM,YUM,YUM. Any leftovers?
Wow, it looks very tempting! My mouth is watering already... too bad Randy is such a picky eater! Maybe I'll have to make this one for myself. Beautiful cooking skills!
Glad to see you blogging again! What a lucky man your husband is, or at least his stomach! That looks so good and I don't even like chicken pot pie!
