Potato Soup Recipe

I actually made this recipe on Tuesday night but I never really ate any of it until Thursday! I ate a peanut butter sandwhich for lunch on Tuesday, and let's just say I threw the peanut butter container out. I don't care if I ever eat it again!!! So needless to say, Luke enjoyed this Crockpot Potato Soup on Tuesday while I enjoyed a big glass of Sprite!

It makes a LOT...so the next time I make it I might 1/2 the recipe. It's super easy and is a great way to use up the potatoes before they start to sprout! Plus its in the crockpot...and ready when you are!

Crockpot Potato Soup:
8 Lg. Potatoes peeled and cubed (make your cubes small if you want it to cook well!!)
6 c. water
2 chicken bouillon cubes
1/2 c. onion, chopped
2 c. milk
1/2 c. flour

Place potatoes, water, chicken bouillon, and onion in crock pot. Cook on low all day til potatoes are tender. (I had big hunks of potatoes so I actually cooked mine on low all day and on high for about 2 hours!) Mix milk and flour together and add to the potatoes the last 30 minutes of cooking. When it thickens it's ready to eat.

** I used my blender stick (or boat motor as Paula Deen calls it) to actually help it thicken. You could just use a Potato Masher if you really wanted.

Add Cheese and some bacon to it....and Salt and Pepper!!! It's really good and easy!!!

It sounds so good! I have some potatoes that I need to use before I have to throw them out, so this weekend, you have given me a reason to use them. Thanks! Hope you are feeling better after your peanut butter incident.

As for the pumpkins I had on my site...they aren't painted, I cut out black tissue paper and "painted" them with glue.

Ok, little lady -

You've inspired me; I have the soup cooking in my crockpot as I type. However, you are in trouble! You made me spew water all over my laptop, as I read "boat motor."
