My Chicken Pot Pie

Ok, so last night I wanted a chicken pot pie...but not one with a biscuit crust. So, I of course, turned to my dear friend Paula. I didn't have the "heavy cream" nor did I want to follow all of her steps...so I used some of her knowledge and some of my own!

Here is what I did:

1. Bought frozen puff pastry. I used both sheets in the box. I let them thaw then I cut them into strips and latticed them onto a piece of parchment paper (on a cookie sheet). I baked them at 375 til they were very lightly browned.
2. Then I boiled my chicken and left a little bit of the broth with it. I added 1 can cream of mushroom soup, 1 can cream of chicken soup, a can of carrots (drained), 1 can of green beans (drained) and 1 can of whole kernel corn (drained).
3. I shred my chicken and mixed all of the above together. I sprayed a 9x13 pan and put the chicken mixture in the bottom. I then transferred the lattice work to the top. I baked it all about an hour or so at 350...watching and turning the heat down so it wouldn't burn on the top. It was to die for!!!
I know, it's sad I took pics of my cooking, but I even impressed myself!!! That's hard to do!

Can you guess who this is???

Luke and I finally purchased a scanner. I have been busy scanning his baby pics. I have wanted to do this for a long time and just never made time for it. Well a couple of days ago I did....and I'm so glad I did. I now have all his Mom's pictures of Luke scanned and I thought I would share a few!!! My goal is to make a scrapbook of his childhood and my childhood.

Bowling with the Sunday School

We had a blast last night bowling. Amber did a great job putting this fellowship on. Most of my pictures were blurry, but that won't stop me from scrapbooking them sometime in the near future. Luke and I bowled with Jason and Alicen and had a blast. Whenever you had a "Strike" you had to grab a blue crown if you were a boy and a yellow crown if you were a girl. You also had to tell an interesting fact about yourself....needless to say, I never got a crown...but, Jason and Luke both got them! I overheard David Nelson tell someone that he performed several Hysterectomys (I'm a horrible speller) that morning....so when Ben DeBusk, our teacher, went to take his crown....he said, "Well I graduated High School in 1980....I know that doesn't compare to doing like 3 hysterectomys....and then Aaron said...."Well I was born in 1979"....Ben didn't have much to say after that! He is such a great teacher and a joy to be around! We also found out Nathan Statton can juggle and do balloon tricks and was even a waiter at Shorty Smalls.

Enjoy my pics...even the blurry ones!

Walking at Sunset Lake

My friend Ann and I have been walking together now for over a week. I really enjoy the time I get to spend with her. She is so sweet and kind. Her husband Randy umpires ball games at Tyndall Park so we always make a stop to say hi! She's having surgery tomorrow so that will stop our walking for a short while.
Luke and I decided to walk the Sunset Lake here in Benton. It's basically a lake by a trailor park, but it's pretty none the less. There were Geese here the last time Ann and I walked. They walked in a line in front of us with their 5 babies and neither one of us had a camera! So, today I made sure I had a camera. Luke was amazed at how many Geese were on the trail. We even saw a bunny as well as many pretty flowers. I think we walked about 3 1/2 miles! I feel wonderful...and I am even starting to get a tan line!!! This is a big deal for someone who has been the spokesperson for "Pale Kids of America"!!!

Bitten by the grilling bug

So after our Memphis trip, Luke and I were ready to grill at home. We had a wonderful meal! I read Paula Deen's recipe (of course I would chose hers!) of her Bacon Wrapped Corn. Well I didn't want the bacon on it this time, so Luke husked the corn of silks....because I didn't want to see the worms. We soaked the husk and corn and all in water for 30 minutes and placed it on the grill with our steaks. We even had a Vidalia Onion on the grill too! I had sweet taters in the oven. It was a wonderful meal! For desert, we grilled Peaches and had Vanilla Ice Cream! Makes my mouth water all over again! We had been working out in the yard all day so it was nice to have a good supper.

The Rendevous

Here are a few pictures from us eating ribs. They were simply delicious and messy! This place is actually in an alley-way. We had help finding it from some man who talked about getting shot....don't ask! Anyway. It was good food and probably the best ribs I've had in a long time! Although, the ones we ate at Ma's a while back were pretty good too!

The Memphis Zoo Trip

Luke and I took a mini-vacation this past week to Memphis, TN. We had a blast! I had forgotten how wonderful the Memphis Zoo really is. It's a whole lot better than the zoo here. Luke and I were able to get some great pictures of the animals. We ate that night at the Rendevous...a BBQ joint in an alley-way! We had a time finding it, but the ribs were soo good! I think the rub had chili powder, onion and garlic powder, and maybe even some nutmeg in it! They were finger-lickin' for sure! We even found a yarn store, scrapbook store, and even a HAM radio store for Luke. It was fun to spend time with Luke away from everything else. I really enjoyed him being off all week!
