Twice Baked Freezer Potatoes

Start with a washed baking potato. Prick with a fork, coat with a little bit of oil, and sprinkle with Garlic Salt.

Do this to all of your baking potatoes- I did 6 potatoes at one time. Place wrapped potatoes on a cookie sheet and bake at 350 for 1 hour- or until potatoes are done.

When the potatoes are done. Unwrap and cool slightly. Using a spoon scoop out the inside of the potatoes and place into a bowl. Mix 1/2 a package of cream cheese, 1/2 a stick of butter, salt and pepper to taste. Scoop this mixture back into your potatoes. Place cookie sheet of potatoes in the freezer and freeze for 30 minutes until hard. Individually wrap your potatoes in plastic wrap and keep in the freezer.

When ready to eat, simply place unwrapped frozen potato in the microwave and cook for 2 minutes....it's a quick and easy side!!!!

The cake was wonderful. The best part of the day was having lunch and working on our prayer shawl items. The fellowship with these ladies just makes my day....I'm truly blessed!

Crock Pot Chicken and Rice

Ok, so no picture tonight, but I had to post this recipe. It's GOOD!!! At least what little I ate out of the middle with a fork- I'm still waiting on Luke to get home.

CrockPot Chicken and Rice
3 cans cream of chicken soup- I used 2 cans cream of chicken and 1 can cream of mushroom- the reduced fat/low sodium kind
4 chicken breasts cut into cubes- uncooked
1 c. instant white rice

Place chicken breasts on the bottom of the crock pot. Mix the soups and rice together and pour over the top. Cook on low 6-8 hours. It's SO good!! Enjoy!

What's for Dinner Tonight....

My friend Amy wanted these recipes so I thought I would share. They are easy and it's what we are eating tonight!

Christylee's Chicken Chimi's
2/3 c. salsa
1 t. cumin
1/2t. oregano
1 1/2 c. shredded cooked chicken
1 c. mexican cheese (I just used shredded cheddar cause it's what I had on hand)
2 green onion tops- I didn't have those, so I didn't use those this time
6 tortillas
2 T. butter

Mix all 6 ingredients together. Fill your tortillas and roll up folding both ends underneath, placing seam side down on a greased cookie sheet. Top each Chimi with melted butter. Bake 400 degrees for 20 minutes.

My Easy Bean Dip
1 can refriend beans
2/3 c. salsa
shredded cheese

Mix refried beans and salsa together. Top with cheese. Cover with foil and bake at 400 degrees until bubbly. Enjoy!!

A New Cookbook

Luke surprised me by ordering a book I have wanted for well over a year. It was a little hard to find, but he found one for $4 bucks at Hastings.com. It's a slow cooker cookbook. I can't WAIT to try out some recipes. I'm hoping to do at least 1 slow cooker recipe a week from this book- and I'll post the good, the bad, and the ugly I'm sure! Wish me luck!!!

A complete misunderstanding....

Well yesterday afternoon was a roller coaster ride for me!! I came home and cried basically all day off and on....thinking about my poor MadisonMurphy. I completely excepted that this is what the Lord had planned, and even begin praying on my way home. I told God I believed Him, Who He was, and what He had in His plans...(the Beth Moore Study I'm working on). I even told Him I knew He could perform miracles if we only just believed that He would do so....then I told Him I believed He could turn this around but I was just being realistic with Madison being 12 and all.

Well last night at Scrap Mania, I was feeling pretty drained. Everyone was really nice and sympathetic- and Mom even set up the whole room so I wouldn't have to worry about it! I got a call from Chris- who works at Dr. Mike's. He read my facebook page and said I got it all wrong. Madison has a LIPOMA not a LYMPHOMA....which means she just has a fatty mass on her belly and it's nothing to worry about. Needless to say, I cried all over again!!!

I can't believe I just misheard what Dr. Mike said! I walked in willing to accept whatever he said, even if it was the worst- and I just thought I heard the worst.

God does perform miracles...and if I hadn't written that on facebook, I would still think my poor baby has cancer. Thank you Lord!!!
